the best caramel popcorn

Since tomorrow is National Caramel Popcorn day, I figured I would share our not-so-secret-since-it’ recipe so you could join in the celebration!

This particular batch pictured is from the baseball (well, wiffle ball is more accurate) themed birthday party I planned for the husband and nephew who share birthdays two days apart in December. We have made this caramel popcorn recipe a lot and everyone loves it. Give it a try!

Caramel Popcorn

  • 1 cup butter
  • 2 cups brown sugar
  • 1/2 cup corn syrup
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 5 quarts popped popcorn
  1. Preheat oven to 250 degrees F. Place popcorn in a very large bowl.
  2. In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
  3. Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.

The longest part for us is popping the popcorn since I do it over the stove, using coconut oil. Otherwise, it’s pretty straightforward. It does take a bit of time to do the stirs in between baking. It’s worth it!

CAUTION: Be careful not to touch the “caramel” mixture when you pour it from the pan. It can burn you! Our sister-in-law found that one out. :{

And for the record. The girls won wiffle ball.
